Is this itinerary for my backpacking trip through Europe do able?
Time Span: One Month on the group (Arriving 29 of June 2012- end August 1st
Transportation: Eurail Global Pass
Amsterdam-3 days
Paris -3 days
Venice- 1 day
Florence- 2 days
Rome -3 days
Pisa/Monaco/ Nice- 1 day
Marsielle- 1 day
Barcalona-3 days
Ibiza -2 days
Grannada- 1 day
Cordoba- 1 day
Day trip to Gibralter
Madrid- 3 days
Leaving some days for travel and the unexpected or for day trips..ect
Any ideas,suggestions or recommendations?

Yes, it can be done. That is a lot of travel, consider making Sundays a rest day. Southern Europe gets very warm in the summer, allow for the heat when you get there.
2 suggestions; Try to get a copy of the train schedules, it will save you time & energy should you get delayed. Arrive early on the popular runs, those cheap seats fill up fast & you might have to wait for the next train.
Make copies of your important paperwork & keep it separate from the originals. If it gets lost or stolen it will make getting replacements easier.
